This sweet and savory jam is perfect slathered on just about anything, especially burgers. Take advantage of homemade smoked bacon for the perfect smoky spread.

12oz (340g) Sweet & Savory Bacon, sliced, or store-bought nitrate- free bacon
1 medium onion, chopped
2 garlic cloves, minced
1⁄4 cup apple cider vinegar
1⁄4 cup firmly packed brown sugar, or 1⁄8 cup Truvía Brown Sugar Blend
1⁄8 cup agave syrup
1⁄3 cup brewed coffee
1 tsp smoked paprika
1⁄2 tsp ground ginger
Dash of curry powder
Dash of ground nutmeg (optional)
1 tbsp bourbon (optional)
1. Cut the bacon into small pieces. In a skillet, cook the bacon bits over medium heat, stirring occasionally, until the fat is rendered and bacon begins to crisp, about 20 minutes. Remove the bacon with a slotted spoon and set aside on a plate. Discard all but 1 tbsp of the rendered bacon fat. Cook the onion and garlic in the remaining fat until translucent, scraping up crispy bits, about 5 minutes.
2. In a slow cooker or medium-sized pot, combine the onion-garlic mixture, bacon, and all remaining ingredients. Cook on low in the slow cooker, or at a low simmer on the stovetop, for 2 to 3 hours, or until the mixture is thick and bubbly and has reduced down. Remove from heat.
3. Once cool enough, pulse jam in a food processer or with an immersion blender until it’s the desired texture. Store tightly sealed in a jar in the refrigerator for up to 1 week.
Pairing suggestion: Replace BBQ sauce with bacon jam in the BBQ Meatloaf for a burst of savory bacon flavor.
