Smoky peaches on cedar planks, finished with mascarpone, honey, and chopped pistachios, are dessert ecstasy. This is the perfect light dessert after a hearty meal.

4 peaches, halved and pits removed
1⁄2 cup mascarpone (about 4oz; 110g)
1⁄4 cup honey
1⁄2 cup chopped roasted and salted pistachios
1 tbsp ground cinnamon
Equipment:
2 (5 x 11in; 12.5 x 28cm) cedar planks, soaked for 20 mins
1. Place four peach halves on each cedar plank, cut-side up. Set the smoker to 250°F (120°C) and transfer the planks to the smoker. Smoke for 30 minutes.
2. To each serving, while the peaches are still hot, add 1 tbsp mascarpone, a drizzle of honey, 1 tbsp chopped pistachios, and a sprinkle of ground cinnamon. Serve immediately.

Peaches can be easily swapped for a different stone fruit, such as nectarines, plums, or apricots.
