Smoked tomatoes, roasted garlic, and molasses make a slightly sweet, smoky sauce that pairs well with any protein and uses less sugar than most recipes.

1 pint cherry tomatoes (yields about 1 cup once smoked)
4 garlic cloves, skins removed
1 cup ketchup (sweetened with dates or sugar, not corn syrup)
1⁄4 cup molasses
2 tsp All-Purpose Smoked BBQ Rub, or other BBQ spice rub
1 tsp freshly ground black pepper
Dash of smoked salt
Juice and zest of 1 lemon
1 tbsp smoked sugar (optional), to taste
1. Make a tray with aluminum foil and arrange the tomatoes and garlic on the tray. Set the smoker to 250°F (120°C) and transfer the foil tray to the smoker. Smoke for 1 hour.
2. In the bowl of a food processor, add all ingredients, including the smoked tomatoes and garlic. Purée to a uniform texture.
3. Transfer to a saucepan, and let reduce, uncovered, over medium heat for 15 minutes.
4. Let cool before transferring to a lidded glass jar for storage. This will keep in the refrigerator for up to 2 months.
Adjust the sugar and salt to your liking. If you like it sweeter but lower carb, you can add a bit of Stevia, to taste.
