Sea scallops smoked on cedar planks make an elegant and delicately flavored appetizer. These cook quickly, perfect to serve just before the main course of longer smoke times.

1lb (450g) sea scallops
1 tbsp olive oil
Zest of 2 lemons
2 tsp flaky sea salt, or to taste
Lemon wedges, for serving
Equipment:
2 (5 x 11in; 12.5 x 28cm) cedar planks, soaked for 30 mins
1. Evenly arrange the scallops on each plank and drizzle with olive oil. Set the smoker to 250°F (120°C) and transfer planks to the smoker. Smoke until the scallops reach an internal temperature of 130°F (54°C) and are no longer translucent, about 20 minutes.
2. If desired to brown the exterior, sear for a few seconds on a preheated grill pan on the stove over medium-high heat. Garnish with lemon zest and salt, and serve immediately with lemon wedges on the side.
Pairing suggestions: This is a great opportunity to pair your scallops with an artisan sea salt display, such as fleur de sel, smoked sea salt, and black Hawaiian sea salt.
Cedar planks can be used again if washed and disinfected with a bit of bleach water.
