REST TIME 2 hrs |
1 (12oz; 340g) bag shaved Brussels sprouts
1⁄3 cup honey
1⁄3 cup grainy mustard
1 tbsp ground ginger
1⁄3 cup apple cider vinegar
Sea salt, to taste
Freshly ground black pepper, to taste
1 slice nitrate-free bacon, cooked and crumbled
1⁄4 cup chopped Sweet & Spicy BBQ Smoked Pecans, or roasted and salted pecans
1. Spread the shaved Brussels sprouts on two grill mats. Set the smoker to 250°F (120°C) and transfer the Brussels sprouts to the smoker. Smoke for 20 minutes.
2. Meanwhile, in a medium bowl, combine the honey, mustard, ginger, and apple cider vinegar. Add the smoked Brussels sprouts, and toss to evenly coat. Season to taste with salt and pepper. Cover and refrigerate for at least 2 hours to soften and absorb flavors.
3. Just before serving, toss in the bacon and pecans so they remain crispy and crunchy. Serve immediately.
Pairing suggestions: Honey gives this slaw a touch of sweetness that works well with ribs or any pork recipe.
The longer the slaw can marinate before serving, the better. Smoking is optional, but it adds a great flavor. Brussels sprouts are a superfood, loaded with nutrients; any opportunity to eat more of them is great for your health!
