For me, this is an easy decision because I shoot all my natural light portraits in aperture priority mode. On most cameras that appears as “Av” or “A” on the mode dial, and I totally recommend it for natural light portrait shooting. Here’s why: What Av mode does is it lets me choose my f-stop (which for portraits is a key decision), and then the camera will automatically choose the right shutter speed for me to get a proper exposure. It limits me having to think so much about the camera settings, so I can focus on working with my subject. I choose my f-stop and forget about everything else, so I’m not futzing with dials or settings during the shoot. Highly recommend shooting in aperture priority mode.
