Braised Short Ribs

2 tbsp ketchup

1 tbsp molasses

2 tsp reduced-sodium soy sauce

2 tsp light brown sugar

2lbs (1kg) boneless beef short ribs

12 tsp kosher salt

12 tsp freshly ground black pepper

1. Make the sauce by combining the ketchup, molasses, soy sauce, and brown sugar in a small bowl. Mix well, and set aside. Season the short ribs with the kosher salt and pepper.

2. Select Sauté, add the short ribs to the inner pot, and sauté for 3–5 minutes, or until the ribs are browned on both sides.

3. Add the sauce to the pot. Using tongs, thoroughly coat the ribs in the sauce.

4. Cover, lock the lid, and flip the steam release handle to the sealing position. Select Pressure Cook (High), and set the cook time for 40 minutes. When the cook time is complete, allow the pressure to release naturally for 10 minutes, and then quick release the remaining pressure.

5. Using a slotted spoon, transfer the ribs to a serving platter. Serve warm.
