Slow Cooker Chicken Cacciatore

This simple and delicious dish is high in protein, low in fat, and rich in antioxidants. Who doesn’t love an easy, healthy dinner where the slow cooker does all the work?

112lbs (680g) boneless, skinless chicken thighs

12 medium red onion, thinly sliced

2 green bell peppers, thinly sliced and seeds removed

12 cup prepared marinara sauce

14 cup From-Scratch Chicken Stock or low-sodium chicken stock

1 clove garlic, thinly sliced

34 tsp kosher salt

Pinch red pepper flakes

14 cup chopped fresh basil

1. Combine the chicken thighs, onion, bell peppers, marinara sauce, chicken stock, garlic, kosher salt, and red pepper flakes in the inner pot. Toss gently.

2. Cover and lock the lid, but leave the steam release handle in the venting position. Select Slow Cook (More), and set the cook time for 6 hours.

3. When the cook time is complete, remove the lid and use forks to shred the chicken. Transfer to a serving bowl and garnish with the basil. Serve warm.
