This earthy, mild side dish is perfect on its own, or added to stir-frys, burritos, or chili. Lentils contain more than twice the protein and six times the fiber of white rice.

2 tsp olive oil
1⁄4 cup finely chopped yellow onion
1 tsp kosher salt
1⁄4 tsp freshly ground black pepper
1 cup red lentils, rinsed and drained
1 cup long grain white rice, rinsed and drained
2 cups water
1. Select Sauté, and add the olive oil to the inner pot. Add the onion, kosher salt, and pepper, and sauté for 2 minutes, or until the onion becomes soft and translucent.
2. Add the lentils, rice, and water to the pot. Stir well.
3. Cover, lock the lid, and flip the steam release handle to the sealing position. Select Rice (Less), and set the cook time for 8 minutes. When the cook time is complete, quick release the pressure.
4. Remove the lid, transfer to a serving bowl, and fluff with a fork. Serve hot.
