ITALIAN SQUASH MEDLEY

This colorful side features lightly steamed squash seasoned with Parmesan cheese and bright Italian spices. It’s extremely low in carbs and makes a wonderful accompaniment to any protein.


112 cups sliced zucchini

112 cups sliced yellow squash

212 tbsp butter, melted

12 tbsp Italian seasoning blend

12 tsp fine grind sea salt

14 tsp ground black pepper

2 tbsp grated Parmesan cheese

1 Place a steamer basket with legs in the inner pot and add 112 cups water to the bottom of the pot. Add the zucchini and yellow squash to the basket.

2 Cover, lock the lid, and flip the steam release handle to the sealing position. Select Steam (High) and set the cook time for 2 minutes. When the cook time is complete, quick release the pressure.

3 Open the lid and transfer the zucchini and squash to a large bowl.

4 Add the melted butter, Italian seasoning, sea salt, black pepper, and Parmesan cheese to the bowl. Toss to coat the zucchini and squash in the butter and spices.

5 Transfer the squash medley to serving plates. Serve hot.

tip If you don’t have a steamer basket with legs, you can use an ovenproof bowl placed on top of the steam rack.
