The user profile data in SharePoint online is similar to the user profile data in Active Directory – it contains attributes or properties related to your user account details. You can access the user profile data page by selecting Manage User Profiles under People on the User Profiles page.

An example of the data stored in a user profile is shown in the following screenshot:

If you are synchronizing your Azure AD directory from an on-premises Active Directory environment, a lot of this may be populated from that. There are a lot of properties on this page (113 in the default SharePoint Online deployment). It's not important to know them for the MS-300 exam – just that they exist and are used to store details about your user account.
