carob chia pudding

Better than chocolate pudding, this treat checks all the boxes: rich in protein, dairy-free, and perfect for our Low Sugar Track. We love chia seeds, which are loaded with antioxidants, omega-3 fatty acids, and fiber.

1 (13.5oz) can full-fat coconut milk

½ cup Almond Milk

¼ cup chia seeds

½ cup carob powder

½ tsp pure vanilla extract

Pinch of Himalayan pink salt

1 tsp Lakanto Classic Monkfruit Sweetener, or 4 tsp stevia (optional)

Unsweetened coconut flakes (optional), to garnish

Fresh berries (optional), to garnish

1   In a high-speed blender, combine the coconut milk, almond milk, chia seeds, carob powder, vanilla, salt, and sweetener, if using. Blend until smooth.

2   Pour the mixture into four small Mason jars, cover, and refrigerate overnight or for at least 6 hours. Serve garnished with coconut flakes or berries, if using.

variation

Feel free to substitute raw cacao powder for the carob when not cleansing.
