garlicky dill dip

We love a good dip and always have one on hand during cleanse time. This is great for a filling snack with raw veggies or our Parsnip Fries. Loaded with flavor, fresh dill is a must in this recipe!

1 cup raw pumpkin seeds, soaked in warm water for 1 hour and drained

¾ tsp Himalayan pink salt

3 cloves garlic

½ cup fresh dill (including some stems)

¼ cup freshly squeezed lemon juice

½ cup olive oil

¼ cup water

1   In a food processor, blend the pumpkin seeds for about 1 minute or until smooth.

2   Add the salt, garlic, dill, lemon juice, and oil. Blend for 5 minutes or until smooth and creamy, scraping the sides as necessary. Slowly add the water, 1 tablespoon at a time, until desired consistency is reached.
