curry roasted cashews

This recipe was contributed by our right-hand woman, Mel, who is the queen of details, all things Instant Pot, and healthy snacking. When she brought these savory cashews to the office one day, we were all hooked.

1 ½ tbsp coconut oil, melted

2 cups whole raw cashews

1 tsp curry powder

½–1 tsp cayenne pepper

½ tsp Himalayan pink salt

1   Preheat the oven to 275°F. Line a baking sheet with parchment paper or a silicone liner.

2   In a large bowl, combine the melted coconut oil and cashews, stirring until fully coated.

3   In a small bowl, mix together the curry powder, cayenne, and salt. Add the spice mixture to the cashews, and stir until fully coated.

4   Spread the cashews on the prepared baking sheet, and roast for 25 minutes. Remove from the oven and let cool. Refrigerate in an airtight container for up to 2 weeks. (As the coconut oil cools, a white film may appear on the nuts.)
