peach crumble bars

We created these bars at the height of peach season in Colorado, resulting in the perfect BBQ treat or kid-friendly snack. Part of their charm is they’re super simple to make and you can swap out the peaches for any fresh fruit that’s in season.

For the crust and topping

1½ cups almond flour

¼ cup brown rice flour

2 tbsp ground flaxseeds

1 tsp baking powder

1 tsp ground cinnamon

½ tsp Himalayan pink salt

½ cup almond butter

6 tbsp maple syrup

½ tsp pure almond extract

For the filling

3–4 peaches, peeled and chopped (about 3 cups; see note)

3 tbsp maple syrup

1 tbsp chia seeds

½ tsp pure almond extract

1   Preheat the oven to 350°F, and line an 8 × 8-inch baking dish with two pieces of parchment paper, one going in each direction.

2   To make the crust and topping, in a large bowl, whisk together the almond flour, brown rice flour, ground flaxseeds, baking powder, cinnamon, and salt. In a small bowl, mix together the almond butter, maple syrup, and almond extract. Add the wet mixture to the dry mixture, and stir until thoroughly combined. (It should be wet enough to hold together well and not crumble apart.) Reserve ½ cup packed dough and set aside. Press the remaining dough into the prepared pan. Smooth it out, and bake for 8 minutes. Remove from the oven and set aside to cool.

3   To make the filling, in a medium saucepan, heat the peaches and maple syrup over medium-high heat. Bring to a low boil. When boiling, reduce heat to medium-low. Simmer for 10 minutes, stirring frequently. Stir in the chia seeds, and cook for 5 minutes or until thickened. Remove from heat and stir in the almond extract.

4   To assemble, spread the peach filling over the almond crust, and carefully smooth it out. Crumble the reserved dough over top. Bake at 350°F for 12 to 13 minutes, watching closely to ensure it does not burn. The crumble topping will be golden when ready. Cool in the pan on a wire rack before cutting, about 30 to 45 minutes.

note

If fresh peaches aren’t available, you can substitute frozen peaches. Just be sure to thaw and drain well before chopping.
