blueberry hemp bites

The perfect blueberry muffin: gluten-free (of course!), vegan, and grain-free. Thanks to the hemp seeds, these make a delicious, protein-packed, grab-and-go breakfast both you and your kids will devour.

1 tbsp ground flaxseeds

3 tbsp water

1½ cups hemp seeds

¼ cup cassava flour (see note)

¼ tsp Himalayan pink salt

1 tsp ground cinnamon

3 tbsp Lakanto Classic Monkfruit Sweetener

1 tsp pure vanilla extract

¼ cup unsweetened nut milk

½ cup fresh blueberries

1   Preheat the oven to 350°F. Grease a 12-cup muffin pan with olive or coconut oil or use silicone liners. In a small bowl, whisk together the ground flaxseeds and water. Set aside to thicken for 10 minutes.

2   In a food processor, blend the hemp seeds to a fine powder. Add the cassava flour, salt, cinnamon, and sweetener. Pulse gently to mix ingredients. Transfer the mixture to a medium bowl.

3   Add the vanilla and nut milk to the bowl with the flaxseeds, and whisk to combine. Add the flaxseed mixture to the hemp seed mixture, and mix thoroughly. Fold in the blueberries. Spoon a heaping tablespoon of batter into each muffin cup. Bake for 25 to 30 minutes.

4   Remove from the oven and let the hemp bites cool completely before eating. Store in an airtight container in the refrigerator for up to 5 days.

note

Cassava flour is gluten-, grain-, and nut-free. It’s high in resistant starch, which is great for helping to regulate blood sugar.
