chocolate chip cookie dough balls

Kudos to the person who first thought of making cookie dough a thing of its own! Featuring tiger nut flour, these are one of our favorite sweet treats. They’re quick to whip together and dangerously delicious.

1½ cups tiger nut flour

¼ tsp Himalayan pink salt

2 tbsp raw honey or maple syrup

1½ tsp pure vanilla extract

4 tbsp olive oil

4–6 tbsp dairy-free mini chocolate chips (Enjoy Life brand recommended) or cacao nibs

1   In a medium bowl, combine the tiger nut flour, salt, honey, vanilla, and oil. Using your hands or the back of a wooden spoon, rub all the ingredients together until they form a coarse meal and are distributed evenly. Add the chocolate chips or cacao nibs, and mix.

2   Scoop a heaping tablespoon of the mixture, and roll until it holds together into a ball. (You may need to add a splash more oil to get the mixture to the correct consistency.) Store in the refrigerator or freezer for up to 1 week.

variation

If you don’t have tiger nut flour on hand, almond flour makes an excellent substitute. Also, melted coconut oil can be used in place of the olive oil with equally delicious results.
