cleansing ginger beet soup

Beets are inherently anti-inflammatory and detoxifying, making this earthy soup perfect for cleansing. They’re also known to boost stamina and aid in circulation while oxygenating the blood. We hope you love this beautifully vibrant soup, with its healthy dose of warming ginger, as much as we do.

4 medium beets, peeled, trimmed, and chopped

1 leek, roughly chopped

1 bulb fennel, roughly chopped (about 1 cup)

2 cloves garlic, roughly chopped

3-in piece fresh ginger, peeled and roughly chopped

8 cups water

Sea salt and freshly ground black pepper, to taste

Juice of 1 lemon

1 tbsp chopped fresh chives, to garnish

1   In a large stock pot, combine the beets, leek, fennel, garlic, ginger, and water. Bring to a boil over high heat. When boiling, reduce heat to a simmer. Cook for about 45 minutes or until the beets are fork-tender. Let cool for 5 to 10 minutes.

2   Transfer the soup to a high-speed blender, and blend on high until smooth. Taste and season with salt and pepper. Add the lemon juice and chives just before serving.

tip

The top portion of the beetroot, called beet greens, can (and should!) be eaten. Discard them, and you lose out on one of the best dark leafy greens out there. We love to rotate them into our green smoothies, adding more iron than even our beloved spinach.
