This vegan, plant-based “cheese” is a delicious alternative to regular feta, perfect while on the Conscious Cleanse. And really, who needs dairy when you have cashews?!
Yield 1 cup
Prep Time 10 minutes, plus 1-hour soak

CLEANSE
1 cup raw cashews, soaked for 1 hour and drained
2 tsp freshly squeezed lemon juice
½ tsp Himalayan pink salt
Freshly ground black pepper, to taste
In a food processor, combine all ingredients and pulse for about 10 seconds. If needed, add 1 tablespoon water to make creamier, and pulse again. Store in an airtight container for up to 1 week.
variation
To make a spreadable cashew cheese, add an additional ¼ cup water and process for 2 to 4 minutes or until completely smooth. Adjust the salt and pepper to taste.
