But not anymore—slow cooker, to the rescue! This Moroccan-inspired dish is loaded with flavor and color—perfect for a chilly night.

2 tsp ras el hanout (see note)

¾ tsp smoked paprika

1 tsp grated fresh ginger

2 cloves garlic, chopped

1 tbsp coconut oil

1 lb boneless lamb shoulder, cut into 1-in pieces

Himalayan pink salt and freshly ground black pepper

2 cups chicken or vegetable stock

1 medium onion, finely diced

3 carrots, cut into 1-in pieces

½ delicata squash, peel on, seeds removed, cut into 1-in pieces

½ lemon, seeds removed, cut into small pieces

1 bunch cilantro stems (bottom portion of the bunch), finely chopped, plus leaves for garnish

½ cup pitted green olives, rinsed

Cauliflower rice or steamed kale (optional), to serve

½ cup unsweetened dried cherries (optional), to garnish

1   In a medium skillet, toast the ras el hanout and smoked paprika over medium heat until fragrant. Add to a slow cooker along with the ginger and garlic.

2   In the same skillet, heat the oil over medium heat until it is melted and the pan is hot. Season the lamb with salt and pepper. Add to the skillet, and brown on each side. Add to the slow cooker.

3   Add a splash of chicken or vegetable stock to the skillet to deglaze the pan, scraping any browned bits from the bottom. Pour the stock into the slow cooker.

4   Add the onion, carrots, squash, lemon, cilantro stems, olives, and remaining stock to the slow cooker. Stir to combine.

5   Cover and cook on Low for 8 hours or until the lamb is fork-tender and the liquid has reduced. Season to taste with salt and pepper.

6   Serve over cauliflower rice or steamed kale, if using. Garnish with cilantro leaves and dried cherries, if using.

note

Ras el hanout is a Moroccan spice blend that can be found in the spice section of gourmet grocers.

variation

To make this recipe cleanse friendly, simply omit the delicata squash or use another hardy vegetable, like parsnips, turnips, or Brussels sprouts, in its place.
