Prep Time 15 minutes, plus 20 minutes to chill
Cook Time None
80:20
1 cup + 2 tbsp unsweetened shredded coconut, divided
4 tbsp melted cacao butter
½ cup raw tahini (Artisana Organics brand recommended)
½ cup Medjool dates, pitted (about 5 dates)
¼ cup cacao powder
Pinch of Himalayan pink salt
¼ cup unsweetened cacao nibs
2 tbsp hemp seeds
1 In a food processor, combine 1 cup shredded coconut, cacao butter, tahini, dates, cacao powder, and salt. Process for about 1 minute or until a smooth texture forms.
2 Transfer the mixture to a medium bowl, and stir in the cacao nibs. Place the mixture in the refrigerator to chill for 20 minutes.
3 In a small bowl, combine the hemp seeds and remaining 2 tablespoons shredded coconut.
4 Using your hands, form the coconut-tahini mixture into about 16 (1-inch) balls. Roll the balls in the coconut hemp seed mixture to coat, and place in a container with a tight-fitting lid. Store in the freezer or refrigerator. Enjoy chilled or frozen.
