The turkey burger recipe in our first book is a cleanser favorite, so we knew we had to do another one. If you like ginger, you’ll love this recipe for flavorful turkey patties. Instead of a bun, try serving it on a lettuce wrap topped with our Egg-Free Avocado Mayo and Vegan Kimchi.
Yield 12 mini burgers

CLEANSE
1 lb ground turkey breast
1 lb ground turkey thigh
1 tbsp olive oil
½ cup chopped sweet white onion
2 tbsp grated fresh ginger
2 scallions, minced (green and white parts)
½ cup chopped fresh cilantro
1½ tsp Himalayan pink salt
¼ tsp freshly ground black pepper
To serve (optional)

1 Preheat the oven to 375°F. Line a baking sheet with foil.
2 In a large bowl, use your hands to combine the turkey (breast and thigh meat), oil, onions, ginger, scallions, cilantro, salt, and pepper.
3 Form the mixture into 12 patties (3–4oz each) and place on the prepared baking sheet. Bake for 30 minutes, turning once.
4 Serve on a lettuce “bun” topped with avocado mayo and kimchi, if using.
