Apple Pies

Enjoy these scrumptious pockets of freshly baked apples and toasty cinnamon or make them with any seasonal fruit, such as pears, berries, or peaches.

1 medium apple (Gala or Granny Smith recommended), peeled and finely diced

juice of ½ orange

2 tbsp granulated sugar

½ tsp ground cinnamon

2 tsp cornstarch

10oz (285g) vegan pie dough

all-purpose flour

1. Set the air fryer temp to 350°F.

2. In a large bowl, combine the apple, orange juice, sugar, cinnamon, and cornstarch. Mix well.

3. Roll out the dough on a lightly floured surface. Cut the dough into 4 rounds. Place 2 tablespoons of the apple mixture in the center of each. Fold the dough in half and seal the edges with a fork. Make a small slit in the top for steam to escape.

4. Place the pies in the fryer basket and cook until golden brown, about 10 minutes. Turn off the air fryer and allow the pies to cool in the fryer basket for 2 to 3 minutes.

5. Transfer the pies to a wire rack to cool before serving.

TIP To make homemade dough, in a blender, combine 2 cups of unbleached all-purpose flour, 1 teaspoon of kosher salt, and ½ cup of canola oil in a food processor. Add 5 to 8 tablespoons of cold water and blend until a loose dough forms.
