Cashew Stir-Fry

This is hands down the easiest stir-fry you’ll ever make. Plus, it has 20% of your daily iron needs per serving. The cashews add protein and healthy fats.

MAKES 4 servings • SERVING SIZE 1 serving

6 cups broccoli florets

1 red bell pepper, sliced

1 cup roasted cashews

1 tbsp canola or avocado oil

2 tsp rice vinegar

2 tsp agave nectar

2 tbsp reduced-sodium soy sauce

4 cups cooked brown rice

1. Set the air fryer temp to 400°F.

2. In a large bowl, combine the broccoli, bell pepper, and cashews. Add the oil and toss well to coat.

3. In a small bowl, whisk together the rice vinegar, agave, and soy sauce. Drizzle over the broccoli mixture.

4. Place everything in the fryer basket and cook for 6 minutes.

5. Transfer the stir-fry to a serving bowl and serve immediately with 1 cup of brown rice per serving.

TIP Some liquid will drip to the bottom of the basket. It’s super flavorful, so be sure to pour this over the top before serving.

TIP Replace the soy sauce, agave, and vinegar mixture with 2 tablespoons of teriyaki sauce.

TIP You can also serve this dish with rice noodles.
