Citrus Salad

with Toasted Rosemary Almonds

MAKES 6 servings • SERVING SIZE 1 serving

2 tsp gluten-free tamari or reduced-sodium soy sauce

1 tbsp finely chopped fresh rosemary

pinch of garlic powder

6oz (170g) raw almonds

2 large oranges, sectioned

12 cups mixed greens

FOR THE DRESSING

¼ cup extra virgin olive oil

juice of ½ lemon

1 tbsp rice vinegar

1 tsp Dijon mustard

½ small shallot, finely chopped

2 tsp agave nectar

¼ tsp kosher salt

¼ tsp freshly ground black pepper

1. Set the air fryer temp to 320°F.

2. In a medium bowl, combine the tamari, rosemary, garlic powder, and almonds. Toss well to coat.

3. Place the almonds in the fryer basket and cook for 5 to 6 minutes. Pause the machine halfway through to toss and to make sure no small pieces are burning.

4. Transfer the almonds to a sheet pan and allow to cool completely. Set aside.

5. In a large bowl, make the dressing by whisking together the ingredients. Taste for seasoning and adjust as needed.

6. In a separate large bowl, combine the orange segments, the mixed greens, and half the almonds.

7. Drizzle the dressing over the top and toss well to coat. Top with the remaining almonds and serve immediately.

TIP Don’t have a shallot? Add a whole peeled garlic clove to the dressing to infuse it with flavor and to avoid munching on raw chunks.

TIP Toasted and cooled almonds can be stored in an airtight container for up to 4 days.
