Banana Bread   

This is the absolutely best thing to do with overripe bananas. Flaxseed and the fruit take the place of eggs in this delightful vegan sweet treat.

MAKES 8 slices • SERVING SIZE 1 slice

1 tbsp ground flaxseed

3 tbsp water

½ cup all-purpose flour

¼ cup almond flour

½ tsp ground cinnamon

½ tsp baking powder

⅛ tsp kosher salt

½ cup granulated sugar

¼ cup unsweetened almond milk

½ tsp pure vanilla extract

¼ cup canola oil

2 medium ripe bananas, mashed

½ medium ripe banana, sliced lengthwise

1. Set the air fryer temp to 310°F. Spray 2 mini loaf pans with nonstick cooking spray. Set aside.

2. In a small bowl, combine the flaxseed and water. Set aside.

3. In a large bowl, whisk together the all-purpose flour, almond flour, cinnamon, baking powder, and salt.

4. In a separate large bowl, combine the sugar, almond milk, vanilla extract, canola oil, mashed bananas, and flaxseed mixture.

5. Gently fold the wet ingredients into the dry ingredients until completely combined.

6. Place half the batter in a pan and top with a sliced banana. Repeat this step with the remaining batter and sliced banana.

7. Place the pans in the fryer basket and bake until a toothpick comes out clean from the center, about 22 to 25 minutes.

8. Remove the pans from the fryer basket. Allow the bread to cool for at least 10 minutes. Remove the bread from the pans before serving.
