6 large garlic cloves, peeled
1 tbsp olive oil
1 tsp kosher salt, divided, plus more
1 pint (300g) cherry tomatoes, quartered
¼ cup chopped fresh basil
2 tbsp balsamic vinegar, plus more
1 baguette
1. Set the air fryer temp to 400°F.
2. Place the garlic in a baking dish. Add the olive oil and ½ teaspoon of salt. Toss well to coat.
3. Place the dish in the fryer basket and cook until tender and golden brown, about 5 minutes.
4. Remove the garlic from the fryer basket and roughly chop. In a large bowl, combine the garlic, tomatoes, basil, balsamic vinegar, and the remaining ½ teaspoon of salt. Mix gently.
5. Cut the baguette into 16 equally sized slices.
6. Working in batches, place 8 baguette slices in the fryer basket and cook until toasted, about 2 to 3 minutes.
7. Transfer the slices to a platter. Top with the garlic and tomato mixture. Season with more salt and balsamic vinegar if desired.
TIP This recipe is perfect for tomatoes fresh from the garden in summer or with jarred sun-dried tomatoes when fresh aren’t in season.
TIP For a “cheesy” version, top the toasted bread with shredded vegan mozzarella-style cheese (Daiya recommended) and return to the air fryer to melt. Then add the tomato mixture.
