Corn Fritters

These tasty treats are like hush puppies meet corn cakes. Broccoli adds a green veggie bonus and tahini helps bind everything together.

MAKES 6 • SERVING SIZE 2

2 tbsp all-purpose flour

2 tbsp cornmeal

¼ tsp baking powder

½ tsp kosher salt

2 tbsp tahini

3 tbsp low-sodium vegetable broth

1 tsp chopped fresh thyme

1 tsp rice vinegar

1 cup corn kernels

½ cup finely chopped broccoli

THE Green Sauce (optional)

1. Set the air fryer temp to 390°F.

2. In a medium bowl, whisk together the flour, cornmeal, baking powder, and salt. Add the tahini, vegetable broth, thyme, rice vinegar, corn, and broccoli. Mix well. (If the mixture seems too dry, add more broth 1 teaspoon at a time until a thick and sticky dough forms.)

3. With clean hands, divide the mixture into 6 equally sized patties. Spray the fryer basket and both sides of each fritter with nonstick cooking spray.

4. Place the fritters in the fryer basket and cook until puffed and slightly golden brown, about 10 minutes. Pause the machine halfway through to flip the fritters.

5. Transfer the fritters to a platter. Allow to cool for 3 to 5 minutes before serving with THE Green Sauce (if using).

TIP These fritters are also mighty delish with salsa and guacamole.
