1 tbsp ground flaxseed
3 tbsp water
1 cup creamy peanut butter (Skippy recommended)
¾ cup light brown sugar
⅔ cup all-purpose flour
1 tsp baking soda
½ tsp kosher salt
1. In a small bowl, combine the flaxseed and water in a small bowl. Mix well and set aside for 5 minutes.
2. In a large bowl, combine the peanut butter and brown sugar. Add the flaxseed mixture, flour, baking soda, and salt. Mix until a soft dough forms. Refrigerate the dough for at least 20 minutes.
3. Set the air fryer temp to 330°F. Spray the fryer basket with nonstick cooking spray.
4. Use a small scoop or tablespoon to roll the dough into 18 equally sized balls. Use a fork to press a diagonal hash mark into each ball.
5. Working in batches, place 9 balls in the fryer basket and cook until slightly golden, about 5 minutes.
6. Transfer the cookies to a wire rack to cool before serving.
