Chocolate Chip Cookie Cups

This decadent treat is perfectly portioned. Easily make this recipe gluten-free by replacing the flour with the same amount of gluten-free baking mix.

1 tbsp ground flaxseed

3 tbsp water

1 cup all-purpose flour

½ tsp baking powder

¼ tsp kosher salt

3 tbsp maple syrup

2 tbsp coconut oil, melted

¼ cup vegan chocolate chips

1. Set the air fryer temp to 340°F. Spray 4 ramekins with nonstick cooking spray. Set aside.

2. In a small bowl, combine the flaxseed and water.

3. In a medium bowl, whisk together the flour, baking powder, and salt. Add the flaxseed mixture, maple syrup, and coconut oil. Mix until just combined. Fold in the chocolate chips. Place an equal amount of batter into each ramekin.

4. Place the ramekins in the fryer basket and bake until puffed and slightly golden, about 8 to 10 minutes.

5. Remove the ramekins from the fryer basket and allow the cookie cups to cool slightly before serving.

TIP Bake these ahead of time and reheat for 2 minutes in the air fryer.

TIP If you’re a fan of raw cookie dough, reduce the cook time to 7 to 8 minutes to up the gooey factor.
