Beet Salad

Don’t count out salads for your air fryer. This combo of fresh veggies, homemade dressing, and air-fried goodies makes for a show-shopping salad.

MAKES 4 servings • SERVING SIZE 1 serving

2 medium beets, peeled and diced

1 tbsp olive oil, divided

½ tsp kosher salt, divided

8 cups mixed greens

Crispy Garlic Chickpeas

1 cup grated carrots

1 cup crumbly vegan havarti-style or Monterey Jack–style cheese

FOR THE DRESSING

2 tbsp olive oil

1 tbsp balsamic vinegar

½ tsp kosher salt

½ tsp freshly ground black pepper

1. Set the air fryer temp to 400°F.

2. In a large bowl, make the dressing by whisking together the ingredients. Set aside.

3. In a separate large bowl, combine the beets, olive oil, and salt. Toss well to coat.

4. Place the beets in the fryer basket and cook until tender, about 8 to 10 minutes.

5. Transfer the beets to a platter and allow to cool for 10 minutes. Place the greens on top of the dressing. Add the beets, chickpeas, carrots, and cheese. Toss well to coat and serve immediately.

TIP Beets and orange are a beautiful pairing. Add some fresh orange juice and zest to the dressing if desired.

TIP Make this salad ahead of time. Assemble and toss with the dressing just before serving.
