Panko-Crusted Avocado Wedges

Never pass up an opportunity to cook an avocado—it’s surprisingly delicious. Creamy flesh gets a flash (air) fry to become encrusted with breadcrumbs.

2 medium ripe avocados, halved and pitted

½ cup aquafaba (from a 15oz [420g] can of chickpeas)

1½ cups panko breadcrumbs

½ tsp kosher salt

1. Set the air fryer temp to 390°F. Spray the fryer basket with nonstick cooking spray.

2. Slice each avocado into 8 wedges. Place the aquafaba and breadcrumbs in separate medium bowls. Dip the wedges in the aquafaba and then in the breadcrumbs.

3. Working in batches, place 8 wedges in the fryer basket and cook until golden, about 5 to 6 minutes.

4. Transfer the wedges to a platter and sprinkle the salt over the top. Serve immediately.

TIP For some spiciness, add a few dashes of hot sauce to the aquafaba.
