Hasselback Sweet Potatoes

4 medium Hasselback sweet potatoes

4 tsp olive oil

1 tsp kosher salt

½ tsp freshly ground black pepper

1. Set the air fryer temp to 300°F.

2. Use a fork to poke a few holes in each sweet potato. Microwave the sweet potatoes for 3 minutes.

3. Use a sharp knife to make a series of ⅛-inch (3mm) slices along the top of each potato. Go only two-thirds of the way down so the potato remains in one piece.

4. Drizzle each potato with 1 teaspoon of olive oil. Season each with ½ teaspoon of salt and ¼ teaspoon of pepper.

5. Place the sweet potatoes in the fryer basket and bake until tender and the tops are crispy, about 20 minutes.

6. Transfer the potatoes to a platter and allow to cool slightly before serving.

TIP To ensure even cooking, use sweet potatoes that are similar in size.
