Sweet Potato Hash

Serve this hash in a grain bowl for a complete meal. I often finish this dish with a squeeze of fresh lime or a few dashes of hot sauce.

MAKES 4 servings • SERVING SIZE 1 serving

2 large sweet potatoes, unpeeled

½ small yellow onion, cut into large chunks

1 poblano pepper, cut into large chunks

1 cup sliced mushrooms

1 tsp kosher salt

1 tbsp olive oil

1. Microwave the sweet potatoes until softened but not completely cooked, about 3 to 4 minutes. Set aside to cool for 10 minutes.

2. Set the air fryer temp to 360°F.

3. Remove the skins from the sweet potatoes and cut the potatoes into large chunks.

4. In a medium bowl, combine the sweet potatoes, onion, pepper, mushrooms, salt, and olive oil. Toss gently to coat.

5. Place the vegetables in the fryer basket and cook for 8 minutes. Pause the machine, shake the basket, and cook for 8 minutes more.

6. Transfer the hash to a serving bowl and serve immediately.

TIP Add black beans or roasted tofu for a protein boost.

TIP You can make this ahead of time, store in the fridge, and eat all week.
