12oz (340g) soy chorizo, casing removed (Trader Joe’s recommended)
15oz (420g) canned chickpeas, rinsed and drained
½ tsp ground cumin
12 lettuce leaves (chopped iceberg lettuce or Bibb lettuce recommended)
chopped fresh cilantro
1 cup grated carrots
pickled jalapeños or Pickled Onions (optional)
THE Green Sauce (optional)
1. Set the air fryer temp to 380°F.
2. Combine the chorizo, chickpeas, and cumin in a baking dish. Place the dish in the fryer basket and cook until hot and the chorizo is slightly crispy, about 12 to 14 minutes. Pause the machine once or twice to stir the mixture.
3. Remove the dish from the fryer basket. Spoon the filling into the lettuce leaves and top with cilantro, carrots, and jalapeños (if using). Serve immediately with THE Green Sauce (if using).
