Peach Parfaits

with Walnuts

This parfait is decadent without the guilt. The air fryer cooks peaches tender, and the crunchy and sweet topping is the ideal flavor and texture balance.

3 tbsp light brown sugar

⅓ cup chopped walnuts

¼ tsp sea salt

4 peaches, halved and pits removed

6oz (170g) dairy-free plain yogurt

1. Set the air fryer temp to 350°F.

2. In a small bowl, combine the brown sugar, walnuts, and salt. Mix well.

3. Place the peaches in the fryer basket. Evenly sprinkle the walnut mixture over the peaches. Cook until the peaches are slightly tender and the sugar has begun to caramelize, about 10 to 12 minutes.

4. Transfer the peaches to a platter to cool slightly. Top with the yogurt before serving.

TIP Use a soy-based yogurt to add protein to this recipe.
