Tater Tot Casserole

Topping a casserole with tater tots is a brilliant hack dating back decades. This healthier veggie-based version lets you love this recipe again.

MAKES 4 servings • SERVING SIZE 1 serving

10oz (285g) vegan frozen tater tots

1 tbsp vegan butter (Earth Balance recommended)

1 tbsp all-purpose flour

½ cup unsweetened soy milk

¾ tsp kosher salt

2 cups mixed vegetables (fresh or frozen and thawed)

½ cup shredded vegan Cheddar-style cheese

1. Set the air fryer temp to 400°F. Spray a baking dish with nonstick cooking spray. Set aside.

2. Place the tater tots in the fryer basket and cook for 5 minutes. Transfer the tater tots to a bowl and set aside. Clean out any crumbs from the fryer basket.

3. In a small saucepan on the stovetop over medium heat, melt the butter. Add the flour and cook for 2 to 3 minutes. Whisk in the soy milk. Add the salt and vegetables. Mix well.

4. Place the vegetable mixture in the dish and top with the partially cooked tater tots.

5. Place the dish in the fryer basket and cook for 5 minutes. Pause the machine and sprinkle the cheese over the top. Restart the machine and bake for 5 minutes more.

6. Remove the dish from the fryer basket and allow the casserole to cool for 10 minutes before serving.

TIP For a protein boost, add edamame, chickpeas, or crumbled soy chorizo to the filling.
