Stuffed Apples

You won’t need added sugar in this recipe—the apple takes care of all the sweetness. Serve slightly warm with a scoop of dairy-free ice cream.

2 small red or green apples, halved horizontally

4 tsp vegan butter (Earth Balance recommended)

¼ tsp ground cardamom

2 tsp ground cinnamon

¼ cup chopped walnuts

¼ cup raisins

pinch of kosher salt

1. Set the air fryer temp to 350°F.

2. Remove the seeds and core from both halves of each apple and place all 4 halves cut side up in a baking dish. Pour about 1 inch (2.5cm) of water into the bottom of the dish.

3. In a medium bowl, combine the butter, cardamom, cinnamon, walnuts, raisins, and salt. Mix well. Equally divide the filling among the apple halves.

4. Place the dish in the fryer basket and bake until the apples are tender, about 20 minutes.

5. Remove the dish from the fryer basket and allow the apples to cool for 10 minutes before serving.

TIP For larger apples, add 5 minutes to the cooking time.
