Black Bean Quesadillas

This is an effortless lunch or dinner made with only four ingredients. Cut the quesadillas into wedges and serve as an appetizer with salsa and guacamole.

8 small flour tortillas (regular or whole grain)

1½ cups shredded vegan Cheddar-style or mozzarella-style cheese

1 cup canned black beans, drained and rinsed

½ cup chopped fresh cilantro

1. Set the air fryer temp to 380°F.

2. In the center of each tortilla, place an equal amount of cheese, beans, and cilantro. Fold the tortillas in half.

3. Working in batches, place 4 tortillas in the fryer basket and cook until the cheese has melted and the tops are golden and crispy, about 4 to 5 minutes.

4. Transfer the quesadillas to a platter and serve immediately with the salsa.
