Chocolate, Orange & Chia Pudding Tarts

These tarts need many steps, but they’re worth them. Chia seeds have omega-3 fats, which help promote a healthy heart, neurological system, skin, and eyes.

1 cup chocolate soy milk

¼ cup chia seeds

1 tbsp orange zest

pinch of sea salt

2 cups all-purpose flour

½ tsp kosher salt

½ cup canola oil

5 to 8 tbsp cold water

1. In a 16-ounce (475-milliliter) glass jar, whisk together the soy milk, chia seeds, orange zest, and sea salt. Allow the mixture to sit for 10 minutes before whisking again. Cover and refrigerate for at least 6 hours. (If you don’t have a whisk that fits inside the glass jar, you can use a medium bowl to whisk together the ingredients.)

2. Set the air fryer temp to 350°F.

3. In a medium bowl, combine the flour and kosher salt.

4. In a separate medium bowl, combine the oil and 5 to 6 tablespoons of the water. Make a well in the center of the flour mixture and pour in the oil mixture. Mix with a fork until just combined. Add 1 to 2 more tablespoons of water as needed. Shape the dough into a ball.

5. Roll out the dough between 2 sheets of wax or parchment paper. Use a 4.5-inch (11.5cm) ring mold to cut out 6 rounds. Transfer the dough to ramekins and press in gently to form the cups.

6. Place the ramekins in the fryer basket and bake until the crust is golden, about 10 minutes.

7. Remove the ramekins from the fryer basket and allow the cups to cool completely. Transfer the cups to a platter. Fill the cups with the chia pudding and serve immediately.

TIP You can make the chia pudding up to 3 days in advance.
