Blueberry Cheesecake
with banana & vanilla

2 cups unsweetened almond milk

2 cups frozen blueberries

1 cup nonfat cottage cheese

1 medium banana

1 tsp pure vanilla extract

  1. 1 In a blender, combine almond milk, blueberries, cottage cheese, banana, and vanilla extract. Blend on high speed until smooth.
  2. 2 Pour the mixture into two chilled glasses and serve immediately.
