This smoothie contains no dairy but tastes like a milkshake thanks to blended cashews and jicama. Leave the plum skin on for more nutrients and an amazing lavender-colored drink.
1⁄4 cup raw cashews
1 cup cashew or almond milk
1 plum, pitted and chopped
1 tbsp wildflower honey
1⁄4 cup chopped jicama
1 Place cashews and 1 cup water in a small bowl and refrigerate for at least 4 hours or overnight. Drain before adding to the blender.
2 In a blender, combine soaked cashews, cashew milk, plum, honey, and jicama. Blend on high speed until smooth.
3 Pour the mixture into two chilled glasses and serve immediately.
