Pumpkin pie
with maple & flaxseed

A squash like pumpkin has plenty of vitamin A, riboflavin, and hunger-fighting fiber. Make sure to buy unsweetened canned pumpkin, not sugary pumpkin pie filling.

 

112 cups unsweetened almond milk

2 tbsp maple syrup

1 cup canned pumpkin purée

3 tbsp ground flaxseed

  1. 1 In a blender, combine almond milk, maple syrup, pumpkin purée, flaxseed, and as many ice cubes as needed. Blend on high speed until smooth.
  2. 2 Pour the mixture into two chilled glasses and serve immediately.
