Use an English cucumber–which have smaller seeds than regular cucumbers–to maximize the nutrients in this refreshing drink. And leave the skin on for more minerals.
1 medium cucumber, diced
zest and juice of 1 lime
1 In a blender, combine 2 cups water, cucumber, lime zest and juice, and as many ice cubes as needed. Blend on high speed until smooth.
2 Pour the mixture into two chilled glasses and serve immediately.
