Introduction

Air frying goes vegan! I’m not an uber-experienced vegan chef, but I am an air fryer expert.

One of the things I’ve learned from years of air fryer cooking is that it’s awesome for preparing vegetables and other plant-based foods. I’ve worked tirelessly to perfect these recipes—and truthfully surprised myself in what is possible with the air fryer when using simple, whole food ingredients. These recipes aren’t designed to always be the lowest calorie options out there—I don’t believe health is only about calories—but all the recipes are sensibly portioned and made with the freshest ingredients.

This collection of vegan recipes sets out to do several things: Reinvent classic recipes, create innovative new flavors, and highlight the beauty of plant-based foods. Apple Pies and Banana Bread demonstrate how scrumptious vegan baked goods can be. Family favorites like fried mozzarella, homemade pizza, and eggplant Parmesan have been rejuvenated with plant-based cheeses and transformed into soon-to-be new family favorites to enjoy: Faux Mozzarella Sticks, Personal Veggie Pizza, and Eggplant Casserole.

Some totally new creations that highlight important nutrients like omega-3 fats, tummy-pleasing fiber, and cell-protecting antioxidants include Chocolate, Orange & Chia Pudding Tarts, Cashew Stir-Fry, Yucca Fries, and Jackfruit Crab Cakes with Homemade Cocktail Sauce. And I know I’m supposed to like all of my recipe children, but Avocado Egg Rolls, Poppy Seed Scones with Lemon Glaze, Fried Green Tomato Po’ Boys, and Kale & Veggie Sausage Wraps are a few of my absolute favorites.

You don’t need to follow a vegan diet to get the most out of this cookbook. Eating a plant-based diet can mean eating more plants, not eating only plants. There are no rules when it comes to plant-based eating—and there’s no disputing that plants are filled with important nutrients—but let’s face it: They have a reputation for being boring and they don’t deserve that! I want to revamp your love for veggies and fruit as well as spark your creativity for legumes, grains, nuts, and seeds. Whether you’re new to air frying or new to plant-based eating—or new to both—these recipes are for you. I can’t wait for you to dive in!
